'Don\'t be afraid of chocolate in the freeze dryer.   Freeze drying Costco Double Chocolate muffins, which have chunks of choolate, and some homemade mini peanut butter chocolate chip cookies. (both the chocolate chips and the cookies are mini) Next, rehydrating a sample of the chocolate chunk muffins. Sure, a chocolate bar isn\'t going to do well in the freeze dryer and technically none of the chocolate is being freeze dried, (because of the lack of water) but it will survive the process just fine. Chocolate milk, chocolate cake, chocolate ice cream, chocolate mousse are all going to do great. And things that have chocolate chips or chunks will PROBABLY come out with little or no issues, also. Take precautions and things will turn out okay.
